It’s nice on salads or simply by itself!
Lemon Pepper Panko Rooster // makes 2
2 thinly sliced rooster breasts (or pounded out to even thinness)
1-2 eggs, often 1 egg per rooster breast
1 cup panko bread crumbs
1/eighth cup grated parmesan cheese
1 Tbsp lemon pepper seasoning
1 tsp garlic powder
1 tsp paprika
1/2 tsp dried parsley
avocado oil for sautéing (or olive oil)
In a shallow dish, crack the eggs and scramble collectively. In a separate dish, combine panko bread crumbs and seasonings. Warmth a pan with avocado oil (sufficient to cowl half of the rooster). Salt and pepper either side of the rooster breasts.
Dip rooster in egg after which dip in panko combination to coat either side nicely.
When the oil is at medium warmth within the pan, add rooster and cook dinner for 4 minutes. Flip and cook dinner for 4 extra minutes on the alternative facet. All the time use a meat thermometer to test for doneness! The thickness of your rooster breasts will decide cook dinner time.
